Method
Prepare mix according to instructions on container.
Lightly spray each muffin cup with non-stick cooking spray. Fill each sprayed muffin cup 2/3 full.
Using a convection oven, bake at 325 F. for 20 to 25 minutes or until done on low fan open vent.
Cool; frost or dust with powdered sugar, if desired.
